Aoki attended several colleges on wrestling scholarships, including Springfield College and CW Post College. It was during this time that he began to showcase his wrestling prowess, winning consecutive US flyweight wrestling titles in 1962, '63, and '64.
Seeking to broaden his horizons, Aoki studied restaurant management at NY City Community College while working tirelessly in an ice cream truck that he rented. After earning an associate degree in management, he used his savings to convince his father to become a co-investor in the creation of the first Benihana restaurant.
